Selamat Hari Raya ke dua!
Sempena hari raya yang mulia ni, aku nak berkongsi satu resepi yang aku rasa rasanya sangat sedap. Tapi perjalanan dan proses membuatnya memakan masa yang agak lama, bukan susah nak buat, tapi nak carik bahan bahannya tu yang payah, lagi lagi bulan pose hari tuh. Nak cari cream cheese punya lah susah. Satu daerah pusing takde. Tapi disebabkan kecekalan yang mendalam, akhirnya, carrot cake yang senang lagi sedap ni siap serta licin sekelip mata!

A
375g flour (shifted)
1 tsp bicarbonate soda (sifted)
1 1/2 tsp baking powder (sifted)
1/2 cinnamon powder (sifted)
220g castor sugar
2 tsp vanilla essence
3 eggs (large)
200ml oil
B
300g grated carrot
200g canned pineapple (drained and chopped)
50g raisins
70g chopped walnut
C (cream cheese icing)
250g cream cheese
70g butter
2 tsp vanilla essence
40g icing sugar (sifted)
Method
1. Cream castor sugar, vanilla and eggs together until fluffy.
2. Add in oil slowly and continue beating. Fold in sifted flour and stir in Ingredients B.
3. Spoon mixture onto greased and lined cake pan (24cm x 24cm). Bake cake at 180 C for 45 to 55 minutes or until the cake is done.
4. Remove cake and cool on wire rack. Beat cream cheese icing until well combined. Spread evenly on cake cut it into any desired shapes.

P/S: Thanks to my bakal adik ipar coz tolong belikan cream cheese. Dah upah sepotong besar kan? hehe. N thanks jugak kat my sis sebab dah tolong siapkan kek ni sama sama.
